Temperature Monitoring ?
I've currently got 13 cameras on a Mac Mini (2018, 3.2 GHz 6-Core Intel Core i7, 16gb RAM) that's dedicated to SS. The case can get quite hot to the touch, about 60°c. I'm planning to add 11 additional cameras to this system in the next few weeks (as well as a second SS server for our studio so maybe put a new M1 in here and move this one to the studio).
What apps do people recommend for monitoring temps? Macs Fan Control is popular on Macrumors. Someone on another thread here uses TG Pro. I also want to be careful that I don't accidentally cause increased overheating w/ a fan control app.
Also, Ben, it'd be nice to have temps in the stats to make it easier to correlate to other SS events though perhaps this is not really much of an issue.

I wouldn't recommend using an app to control the fan speed - let the Mac do this (though of course it's fine to use an app to merely monitor the temperatures and fan speeds). The best advice is to make sure the Mac has access to plenty of ventilation, and situate it in a cool location if possible. Even though the case might feel quite hot, and the fans may be running quite high, this doesn't indicate a situation that needs any remedial action - the Mac is most likely perfectly happy running like this.
We'll take a look at adding temperatures to the stats, however I'm not sure how useful this would be to most users. Certainly, if you replace your Intel mini with an M1 one, you will see that it runs much cooler, as its power consumption is impressively low.
