H.264 Profiles: Main vs. High

There isn't a big difference.
The High profile uses the most complex encoding, and offers slightly lower data rates than the other profiles, but can eat up more CPU time for the decoding.
The other profiles are Baseline (the most basic) and Main (medium complexity).
You'll probably only save 5% bandwidth/storage by using High vs Main, and perhaps 10% by using High vs Baseline. If your Mac has plenty of spare CPU capacity then go for High, but if not, then go for Baseline or Main.
